Minestrone Genovese

The minestrone Genovese is the most popular dish of the Ligurian cuisine. It is eaten especially in spring, with the triumph of fresh vegetables. In Liguria, but generally, in the italian cuisine, it continues to hold a place of honor on the family table and in restaurants.

Ingredients for 4 people:

4 zucchini, 2 potatoes, 1 carrot, some chards, some string beans, 1 celery, 1 onion, vegetable broth, olive oil, a piece of pumpkin, 2 tablespoon of pesto sauce (adding this strongly flavored Genoese sauce to the soup gives it a character all of its own), grated parmigiano cheese,

Preparation:
Wash, trim and peel the carrot, zucchini and the potates. Slice the carrot and zucchini into rounds and cube the potatoes. Then, slice the celery and chop the onion. Wash the chards and the string beans and cut into pieces. Cut the pumpkin in half and remove the seeds. Slice the pumpkine into little pieces.

Place all these vegetables into a stockpot, add the vegetable broth and some olive oil (about two tablespoon).Then, cook for about 2 hours.

When the minestrone is cooked, add the pesto sauces, some olive oil and serve with some grated parmigiano cheese.

Suggestions:

You can add pasta (for example macaroni). Add the macaroni during the last 10-12 minutes of cooking so that it cooks al dente.
